Have you noticed all the talk about a vanilla crisis? I hadn’t taken much notice myself as I was well stocked.
And then supplies ran low and I went to order more vanilla extract. Oh my! The last time I bought a 1 litre bottle it cost me £25. A few weeks ago I went back to the same supplier and they now wanted almost £60! Another site was asking £98! I was in shock.
It is all due to the orchid that produces the vanilla bean having had a bad year. It’s not an easy crop anyway, and is hard to farm on any kind of industrial scale. So a bad year causes big problems, and big price rises!
So I took to the interwebs. I’d heard in the past that you can make your own vanilla extract. I googled it. And you can!
All you need is some vanilla pods and vodka. Split the pods, pop them in a jar or screw top bottle and cover with vodka. Then wait, and shake, and wait.
The other thing I have been doing is rinsing out old vanilla bean paste jars with vodka and adding them to the mix.
